Tequila is technically a mezcal, but all mezcals are not tequila. Like cognac is a brandy from a specific region of France, tequila is a mezcal from a specific region of Mexico. Tequila and mezcal are products differentiated by the production process, type of agave, place of origin and taste. Much similar how rye whiskey and Scotch whisky differ. There are two categories of tequila: “mixtos” and “100% agave tequila”. Mixtos only use 51% agave, with other sugars making up the 49%. While 100% agave Tequila only uses sugars from agaves.Tequila is also classified by its aging process:
BLANCO
"White" or "Silver" - Rested for less than two months, often unaged, this tequila is bottled or stored immediately after distillation.
REPOSADO
“Rested” - Aged in oak barrels anywhere from two months to a year, obtaining through this process a woody flavor, developed to create a more intricate profile than the “blancos”.

MEZCAL
The original spirit of Mexico.
Mezcal is a generic word that defines a wide range of distilled agave spirits. Most mezcals are produced in Oaxaca although it can also officially be produced in the states of Guerrero, Durango, San Luis Potosí and Zacatecas. Mezcal can be made from up to 28 recognized species and varieties of agave; 90% of Mezcal currently produced is made from the Espadín Agave variety (Agave Angustifolia). On the contrary, only the “Agave Azul Tequilana Weber” variety can be used for tequila. Agave varieties can be blended to create a diverse flavor pallet such as done when producing different flavors of wine.
